Here's another restaurant try-at-home. Easy and simple and tasty too.
Ingredients:
- 1 tbs canola oil
- 2/3 cup white rice
- 1 cup water
- 1 tsp salt
- 1 lime (juiced)
- 2 tbs fresh cilantro
1. Heat oil, add rice and lime juice. Stir for 1 minute.
2. Add water and salt. Bring to a boil.
3. Reduce heat to low, cover and simmer about 20 minutes (until water is absorbed).
4. Meanwhile chop cilantro.
5. Add cilantro and mix well. Season with salt and additional lime juice to taste.
